Zucchini Fudgy Protein Brownies

I spent a large portion of my life severely overweight and constantly struggling to find a healthy relationship with food.  I happen to LOVE cooking and baking, probably due to the fact that I come from a large Italian family and my brother was a gourmet chef.  Whatever the reason, I began experimenting with food by taking my formerly "unhealthy" recipes and figuring out how to make them healthier.  The result?  TONS of delicious recipes that allow me to eat the foods I love without the guilt.  BALANCE WITHOUT DEPRIVATION!  It is a joy to be able to share these recipes with you.  Play around with them in your own kitchens. Ingredients:

1/4 cup unflavored or chocolate protein powder (I use Quest Multi Purpose Baking Mix OR Clutch Bodyshop Baking Mix. Both are of the highest quality and are unflavored and unsweetened  πŸ˜Ž)

1/4 cup RAW Honey OR 3 tbsp organic stevia blend OR 6 tbsp baking stevia OR date sugar

1/4 cup dark cacao powder

2 tbsp. coconut flour

1/2 tsp baking soda

1/8 tsp. salt (optional)

1 cup (1 medium) zucchini, grated fine

2 tbsp. unsweetened applesauce OR coconut oil

1/4 cup (2 large) egg whites OR vegan egg substitute

1 1/2 tsp. pure vanilla extract

1/4 cup (1 oz.) dark chocolate chips (optional)

Instructions:
Preheat oven to 350 degrees F.

Whisk together dry ingredients in a mixing bowl.
Finely grate zucchini (peel if you don't want green bits in your brownies). No need to squeeze out moisture.

Add finely grated zucchini and remaining wet ingredients to dry ingredients and mix until combined. Batter will be kind of "sloppy."  Stir in chocolate chips if desired.

Lightly coat an 8"x6" baking dish with cooking spray and pour batter into dish.  OR pour into individual mini brownie molds. 

Bake for 25-30 minutes until set. Do not over bake as they will continue to cook in the pan once removed from the oven. 

Let your brownies sit for 10-15 minutes before cutting into squares. Enjoy immediately or store in the fridge in an airtight container for up to a week or in the freezer for up to a month.

**you can also throw all ingredients into a Vitamix (blender),  just don't over blend or the brownies will get a spongy texture 😘
